Traditionally served with fragrant rice, poached chicken, and a variety of sauces, it reflects the culinary influences of both Chinese and Malay cultures. Today, it is a beloved dish not only in Singapore but also in various Southeast Asian countries, often enjoyed as street food or in restaurants.

1 whole chicken
3 inch piece of ginger
1 yellow onion cut in half
2-3 green onions (white part)
kosher salt
3 cups of uncooked white rice
1 Tbs of oil
1 Tbs minced garlic
1 Tbs minced ginger
1/2 tsp salt
3 1/4 cups of chicken broth
3 Tbs Sugar
3 Tbs Fish Sauce
3 Tbs Lime
2 Tbs minced ginger
1 Tbs minced garlic
1 Tbs chili Garlic Sauce
1 Tbs chicken stock
1 Tbs Oyster Sauce
2 Tbs Soy Sauce
1 Tbs Sesame Oil
1 Tbs Chicken stock
2 tsp sugar
1/4 tsp salt
1 cup chopped scallion
1/2 cup oil
1 inch ginger cut in little sticks
1/2 tsp salt

Give chicken a rub with kosher salt to exfoliate the skin.

Soak chicken in cold salt water for 30 minutes.

Drain and rinse.

Pour boiling hot water on chicken to tighten skin.

In a large pot add chicken, onion and ginger.

Bring to boil over medium high heat, loosely covered.

Add 1 Tbs of salt.

Once boiling remove lid and simmer on low setting for 20-30 minutes.

Once chicken is cooked remove and rub a little sesame oil over chicken.

Cover and let cool about 30 minutes.

Cut chicken and put any bones back into pot.

Simmer for another 30-min - 1 hr.

Reserve some broth for the rice and sauce.

Strain and reserve the rest of the broth for soup.

Rinse and clean rice ahead of time.

In a skillet add 1 Tbs cooking oil over medium high heat.

Sauté garlic and ginger until fragrant 30 seconds.

Add rice and sauté until rice is white and no longer translucent.

Add 1/2 tsp of salt.

Transfer to rice cooker and add in chicken stock.

Cook as usual.

Combine all ingredients for each sauce and mix.

For the broth, bring to boil, add 1-2 tsp of salt to taste, add pepper to taste, add in green onions or cilantro.
