Activate the yeast by stirring 1 tablespoon of caster sugar into 300 ml of warm water.

Add 14 grams of quick yeast to the water, stir, cover, and let it sit for 5-10 minutes until frothy.

In a separate bowl, combine 400 grams of gluten-free white bread flour, 2 teaspoons of xanthan gum, 1 teaspoon of salt, and 2 teaspoons of baking powder. Stir well and set aside.

Once the yeast is frothy, make a well in the dry ingredients and pour in the yeast mixture.

Add 4 tablespoons of vegetable oil to the mixture and mix well with a wooden spoon until it forms a thick dough.

Cover the bowl with cling film and let the dough rise in a warm spot for about 1 hour until it doubles in size.
