Prepare the lievitino by mixing 25g of yeast with 100ml of warm water, 1 tablespoon of honey, and 100g of Manitoba flour. Let it rest until bubbly.
In a large bowl, combine 550g of flour (half Manitoba and half type 00), 125ml of milk, 90g of melted butter, 2 eggs, 80g of sugar, and the zest of half an orange.
Mix until a dough forms and knead until smooth.
Let the dough rise for about 1-2 hours until doubled in size.
Roll out the dough and spread 40g of melted butter and 40g of sugar on top for layering.
Fold and roll the dough to create layers, then cut into triangles.
Roll each triangle into a croissant shape and place on a baking sheet.
Brush with 1 egg yolk before baking.
Bake in a preheated oven until golden brown.
