New York Bagels

4 cups bread flour
1 tablespoon sugar
1 tablespoon salt
1 packet (2 1/4 tsp) active dry yeast
1 1/2 cups warm water (110°F)
1 tablespoon malt syrup (or honey)
1 egg (for egg wash)
Sesame seeds or poppy seeds (for topping)

In a large bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for about 5-10 minutes until frothy.

Add the bread flour and salt to the yeast mixture. Mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat the oven to 425°F (220°C).

Bring a large pot of water to a boil and add malt syrup or honey.

Divide the dough into 8 equal pieces and shape each piece into a ball. Poke a hole in the center of each ball and stretch it to form a bagel shape.

Boil the bagels in the water for about 1-2 minutes on each side. Remove and drain on a wire rack.

Place the boiled bagels on a baking sheet lined with parchment paper. Brush with egg wash and sprinkle with sesame or poppy seeds if desired.
