2 teaspoons rapid rise yeast
4 and 1/2 teaspoons sugar
3 and 1/2 cups bread flour
2 teaspoons salt

Pour 1 and 1/4 cups of warm water into a bowl.

Sprinkle 4 and 1/2 teaspoons of sugar over the water and mix.

Sprinkle 2 teaspoons of rapid rise yeast on top of the water.

Add 3 and 1/2 cups of bread flour and 2 teaspoons of salt to the bowl.

Mix on low speed with a KitchenAid until combined.

Knead the dough by hand for about 5 minutes, adding up to 1/2 cup of extra flour if needed.

Place the dough in a greased KitchenAid bowl, cover with plastic wrap, and let rise in an oven preheated to 200 degrees for 1 hour.

Punch down the dough and let it rest for 10 minutes.

Divide the dough into 8 equal pieces and shape each piece into a bagel.
