Flaxseed meal is a vegan alternative that binds well.
In a bowl, combine 1 teaspoon gelatin, 1 tablespoon brown sugar, 1 teaspoon salt, 2 teaspoons xanthan gum, 4 teaspoons baking powder, 1 cup brown rice flour, and 1/2 cup potato starch.
Warm 1 1/2 cups milk in the microwave until hot.
Add 1/4 cup coconut oil to the warm milk and stir until melted.
In a separate bowl, whisk 1 egg with a little milk to prevent curdling.
Combine the egg mixture with the milk and coconut oil mixture.
Transfer the mixture to a KitchenAid mixer and mix until smooth and well combined.
Place the dough in a piping bag or ziplock bag for easier shaping.
Shape the dough into bagel rings by rolling it into a log and pinching the ends together.
Place the shaped bagels on a baking sheet lined with a silicone mat or parchment paper.
Freeze the bagels for 3 hours.
Boil water in a large pot and add 1 tablespoon baking soda and 1 tablespoon molasses.
Boil each bagel for 30 seconds on one side, then flip and boil for another 10 seconds.
Remove the bagels from the boiling water and sprinkle with sesame seeds or onion powder while wet.
Place the bagels on the bottom rack of the oven and bake for 20 minutes at 425°F (220°C).
After 20 minutes, move the bagels to the top rack and bake for an additional 10 minutes until golden brown.
Let the bagels cool before slicing.
