Originating from the Teochew and Hokkien communities in Singapore, Bak Kut Teh, or 'meat bone tea,' is a beloved dish that showcases the rich flavors of pork simmered with aromatic herbs and spices. Traditionally enjoyed as a hearty breakfast or comfort food, it symbolizes family gatherings and communal meals. Today, variations abound, with some featuring herbal infusions or different meats, making it a versatile dish enjoyed across cultures.

Blanch the pork ribs and belly with boiling water to remove impurities.
Soak the dried mushrooms and bean curd sticks in warm water.
Add the meat, bones, soaked mushrooms, spice mix, and herbal blend to the Instant Pot.
Pour in the water.
Set the Instant Pot to cook for 35 minutes and deselect keep warm.
Cut the soaked bean curd sticks into 1 to 2 inch pieces.
Once the Instant Pot cycle is complete and the pressure has released, turn on the saute mode to bring the soup to a boil.
Add the bean curd sticks and let them simmer for 5 minutes.
Add soy sauce, salt, and pepper seasonings.
Remove the pork belly, ribs, yam roots, dried logan, and mushrooms.
Assemble the Bak Kut Teh by arranging the meat and other ingredients in a bowl and ladling the flavorful broth over top.
