Crab Pancit Palabok

0.80 lb smoked fish
1 lb deveined shrimp
6 Cloves garlic
2.5 oz chicharron- fried pork rinds ground
1.5 Annatto powder
3 tbsp fish sauce
5 tbsp cornstarch
2 tbsp Olive oil
water
Salt
Pepper
4 liters of water
1 tbsp olive oil
1 tbsp salt
6 cups water
2 tsp salt
¼ tsp ground black pepper
½ cup water

Peel off skin and shred fish into small pieces.

Save the skin, bones and head for broth.

Use knife to dice fish.

Boil 4 liters of water.

Add 1 tbsp of olive oil and 1 tbsp of salt.

Then, add Palabok cornstarch sticks noodles.

Cook and cover for 15 - 17 minutes.

Drain the noodles and rinse with water.

Peel shrimp and set aside meat in a bowl and shrimp peels in a pot.

Add the bones, skin and head in the pot with the shrimp peels then, add 6 cups of water.

Add 2 tsp salt and ¼ tsp ground black pepper.

Cover and bring to a boil then, set aside.

Mix cornstarch and water.

Minced 6 cloves garlic.

In a heated pan, add olive oil.

Saute garlic, then add shrimp.

Cook the shrimp just a minute each side then, add ½ tsp salt and ¼ tsp ground black pepper then, set aside.

Add diced fish meat and cook until light brown.

Add 3 tbsp fish sauce and 1.5 tbsp annatto powder and ½ cup of pork rinds.

Strain the broth of boiled shrimp peeled and fish bones.

Cover and let it boil.

Add cornstarch and cook until liquid is thick.

Spread the sauce on top of cooked noodles and top with pork rinds.

Add cooked shrimp, boiled eggs and the remaining pork rinds.
