Fill a cooking pot with lots of water and heat it on high heat.

Wash the vegetables while waiting for the water to boil.

Season the minced meat with 1/2 tsp pepper and 1 tbs fish sauce, then mix well.

Once the water starts boiling, reduce the heat to medium and add the dried rice noodles.

Cook the noodles for about 8 minutes while stirring, then drain in a sieve and rinse with cold water to remove starch.

Lift the noodles with chopsticks during drying to prevent sticking.

Combine the eggs with the seasoned minced crab.

Cut the tomatoes into wedges and prepare the spring onion by cutting it diagonally into rings.

Put 1.5 litres of water on the stove and heat on high until boiling.

Once boiling, reduce to medium heat and add the minced meat, breaking it into small pieces.

Ladle off any foam to clarify the broth.

When the foam is mostly removed and the meat is cooked, add the fish sauce and tomatoes.

Cook until the tomatoes change color and the skin starts to peel off.

Swirl the egg and crab mixture and pour it into the center of the pot without stirring.

Let it cook on medium heat for at least 6 minutes, checking if the egg pieces have risen to the top.

If the eggs haven't risen, carefully scrape the bottom with a ladle to check.

Continue cooking for another 2-3 minutes if needed until the eggs are cooked and floating.

Dish off by adding noodles, broth, meat, crab, and egg, then sprinkle with spring onion and chili pepper.
