Rinse the beef bones and pat dry with a paper towel.

Preheat the oven to 450°F (230°C). Roast the beef bones for 20 minutes.

Toast the spices (star anise, cloves, cinnamon sticks, and coriander seeds) in a pan over medium heat for about 3 minutes, until fragrant.

Add the oil to the instant pot (8 quart) and select the saute option.

Add sliced ginger and onions. Cook until charred, about 10 minutes.

Add soy sauce, fish sauce, brown sugar, salt, black peppercorns, toasted spices, and roasted beef bones. Fill with water to the max line.

Close the lid and make sure the valve is set to the “sealing” position.

Set to pressure cook on high for 2 hours.

When broth is done cooking, use the quick pressure release. (Pro Tips: To avoid splattering, let the pressure release naturally for 20 minutes and then use quick release for the remaining pressure.)

Strain the broth thoroughly.

Skim the broth for excess fat. I usually refrigerate overnight to remove fat easily.

Adjust seasoning by adding more salt, sugar, fish sauce, and water to taste.
