Prepare the oxtail by cutting it in half using a knife and a heavy object like a rolling pin.

Place the cut oxtail into a stockpot and cover with water.

Turn on the gas and bring the water to a boil, then let it simmer for about 10 minutes.

As the oxtail simmers, prepare the onion by cutting it in half and then each half again, placing it in a roasting tray.

Roughly chop the ginger into pieces and add it to the roasting tray with the onion.

Preheat the oven and roast the onion and ginger for about 20 minutes.

After 10 minutes of simmering, drain the oxtail and wash the bones and the pot thoroughly to remove any scum that has formed.

Add 3.7 liters of fresh water to the cleaned pot along with the roasted onion and ginger.

Bring the pot back to a boil.

Toast the spices in a dry pan over low to medium heat until aromatic, being careful not to burn them.

Place the toasted spices into a cheesecloth or a makeshift spice bag and tie it off.

Add the spice bag to the pot along with a piece of rock sugar and fish sauce.
