2 beef bouillon cube
1 tbsp fish sauce
1 tbsp sugar
5 pcs sliced into thin tiles ginger
1 yellow onion, large diced
3 whole cloves
2 whole star anise
1/2 tsp ground cinnamon or 1 cinnamon stick
black pepper to taste
salt to taste if needed
250 gms thin flat rice stick noodles
250 gms beef strip loin or fillet, shaved thin
1/2 cup fresh basil leaves
1 cup bean sprouts
1/2 cup fresh parsley leaves or cilantro leaves
1 cup baby spinach
1/2 cup fresh mint leaves
1/2 cup onion leaves sliced
1/2 yellow onion, sliced thinly
1/2 tbsp Hoisin sauce per serving
Chili sauce, such as Sriracha, for the table (OPTIONAL)
hard-boiled egg (OPTIONAL)

Prepare the beef pho stock by dissolving the beef bouillon cubes in water, adding fish sauce, sugar, ginger, diced yellow onion, cloves, star anise, ground cinnamon, black pepper, and salt. Simmer to develop flavors.

Strain the stock to remove solids and return it to the pot if necessary.

Cook the rice stick noodles according to package instructions and drain.

In a bowl, place cooked noodles and top with thinly sliced beef strip loin or fillet.

Ladle hot stock over the noodles and beef to cook the meat.

Garnish with fresh basil, bean sprouts, parsley or cilantro, baby spinach, mint leaves, sliced onion leaves, and thinly sliced yellow onion.
