Rinse the sushi rice under cold water until the water runs clear.

In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions.

Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the rice. Let it cool to room temperature.

Lay a sheet of nori on a bamboo sushi mat, shiny side down.

Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

Place a few pieces of fried soft-shell crab, avocado slices, and cucumber strips in the center of the rice.

Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll.

Once rolled, use a sharp knife to slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Drizzle spicy mayo and eel sauce over the top of the roll, and sprinkle with sesame seeds.

Serve with soy sauce and pickled ginger on the side.
