Large Prawns - Net 400 gms. after shelling and deveining
Salt- 3/4 tsp
Turmeric powder-1/4 tsp
Lemon juice -1 tsp
Coriander Seeds- 1.5 tsp
Cumin Seeds- 1 tsp
Fennel Seeds- 1 tsp
Black Peppercorns- 1.5 tsp
Methi (Fenugreek) Seeds- a pinch (1/8 tsp)
Dried Byadgi Red Chillies-9-10
Kashmiri Chilli Powder-1 tsp
Ginger chopped -1.5 inch piece
Garlic cloves- 6 cloves
Jaggery powder-2 tsp
Salt-pinch
Tamarind juice - 3 tbsp
Water- 5-6 tbsp
Ghee (Clarified Butter)- 4 tbsp + 2 tbsp
Onion, fine chopped- 120 gms
Curry leaves- 15-20 leaves

Shell and devein the prawns. Wash and strain the water, pat dry the prawns.

Soak the tamarind in some water and take out the juice/pulp.

Peel the ginger & garlic and chop the ginger.

Dry roast the coriander seeds, cumin seeds, fennel seeds, black peppercorns, methi seeds, and dried Byadgi red chillies on low heat for 3-4 mins.

Allow the roasted spices to cool and then add them to a grinder along with the chopped ginger, garlic cloves, Kashmiri chilli powder, jaggery powder, and a pinch of salt. Coarse grind to a powder and then add the tamarind juice & 5-6 tbsp water. Blend it to a smooth paste.

Marinate the prawns with salt, turmeric powder, and lemon juice; set aside for 15-30 mins.

Heat 4 tbsp ghee in a pan and add the chopped onions. Fry on medium heat for 5-6 mins till translucent.

Add the cooked masala paste and 1/4 tsp salt; fry on medium heat for 5-6 mins.

Lower the heat and continue to fry on low heat for another 8-9 mins till the masala is cooked and ghee separates. Remove the pan from the stove.

In another pan, add 2 tbsp ghee and the marinated prawns. Fry on medium heat for around 2 minutes on both sides.

Add the masala paste to the fried prawns, mix well, and continue frying on medium heat for 2 mins.

Add the curry leaves, mix, and then cook on medium heat for another 3 mins.
