Prepare 500 g of large prawns by removing the shell and head, and deveining them. Cut a slit in the middle and create a flower shape with the tail.

Heat a clay pot or pan over medium-low heat and add approximately 3 tbsp of oil, spreading it around.

Add one whole bulb of chopped garlic to the pot and stir to brown slightly, then turn off the heat to prevent burning.

Remove the garlic using a strainer and set aside, reserving the oil in the pot.

In the same oil, add another bulb of chopped garlic and fry until golden brown, stirring continuously to avoid burning.

Add 250 ml of water, 1 tbsp of oyster sauce, 2 tbsp of light soy sauce, 0.5 tbsp of dark soy sauce, a few dashes of pepper, and 0.5 tsp of sugar to balance the taste. Mix well without boiling.

Add soaked glass vermicelli (70 g) to the pot, followed by the prepared prawns. Cover with a lid and cook for approximately 8 minutes.

Garnish with chopped spring onions and the reserved golden garlic before serving.
