Heat a pan and add about 1 tablespoon of oil, swirling it around.
Add half a bulb of minced garlic and stir for about 10 seconds to release fragrance without browning.
Add 1 tablespoon of oyster sauce and 1 teaspoon of sugar to the pan, stirring to combine.
Turn off the flame and add 1 tablespoon of light soy sauce, 1 tablespoon of Chinese cooking wine, and 80 milliliters of water to the pan, mixing well to create the sauce.
Let the sauce cool down before pouring it over the prawns and glass noodles.
Hydrate 80 grams of glass noodles by soaking them in warm water for 20-25 minutes until soft.
Prepare 420 grams of banana prawns by splitting them open and removing the veins, then lay them side by side over the hydrated glass noodles.
Spread the prepared sauce over the prawns and glass noodles, ensuring even coverage.
Prepare a pot of boiling water for steaming.
Once boiling, place the prawns and glass noodles in the steamer and steam for about 4 to 5 minutes.
While the prawns are steaming, heat a pan with about 1 tablespoon of oil and add the remaining half bulb of minced garlic, frying until light golden brown on medium heat.
After 4 minutes, check the prawns; if done, turn off the heat and spoon the crispy garlic over the prawns.
Spread some chopped spring onion over the dish before serving.
