Combine panko breadcrumbs and Italian herbed breadcrumbs in a bowl and toss until well combined.
In a mixing bowl, combine corn starch, a pinch of salt, red chili flakes, crushed black pepper powder, and paprika powder.
Gradually add a little water to the dry ingredients to make a smooth batter, ensuring it is not too runny.
Line a baking tray with parchment paper and set it aside.
Dip the paneer cubes into the batter, ensuring each piece is evenly coated.
Coat the paneer in the breadcrumb mixture, pressing gently to ensure the breadcrumbs stick well.
Transfer the coated paneer cubes onto the baking tray.
Brush each cube with a tiny amount of olive oil.
Bake the paneer in the oven at 400°F for about 15 minutes, flipping halfway through until crispy and golden.
In a separate bowl, combine hung yogurt, grated garlic, Thai sweet chili sauce, soya sauce, Sriracha or red chili sauce, lemon juice, and a pinch of crushed black pepper.
Mix the sauce ingredients until well combined.
Remove the baked paneer from the oven.
Transfer the paneer cubes into a large bowl and pour the prepared sauce on top.
Sprinkle fresh coriander on top and gently toss until each paneer piece is coated in the sauce.
Transfer the bang bang paneer to a serving dish and garnish with freshly chopped spring onions.
Serve immediately.
