Prepare the filling by sautéing chopped onion, garlic, and ginger in oil until fragrant.
Add chopped prawns, green chilies, and cook until prawns turn pink, about 3-4 minutes.
Stir in coconut milk and lime juice, then mix in chopped coriander leaves. Season with salt and pepper. Set aside to cool.
Make the dough by melting butter in a saucepan, then adding water and bringing to a boil.
Stir in all-purpose flour and mix until a smooth dough forms. Remove from heat and let cool slightly.
Roll out the dough on a floured surface to about 1/8 inch thickness.
Cut out circles using a round cutter or glass.
Place a spoonful of the cooled prawn filling in the center of each circle.
Fold the dough over to create a half-moon shape, sealing the edges with a fork.
Dip each rissole in beaten egg, then coat with breadcrumbs.
Heat oil in a deep pan over medium heat until hot.
Fry the rissóis in batches until golden brown, about 3-4 minutes per side.
Remove and drain on paper towels before serving.
