Traditional Baked Cod

Bacalhau, or cod, holds a special place in Portuguese cuisine, often referred to as the 'faithful friend' due to its versatility and historical significance. Traditionally served during religious holidays and family gatherings, this dish showcases the simplicity and depth of flavor that characterizes Portuguese cooking. With its global popularity, variations of baked cod have emerged, but the essence remains rooted in its cultural heritage.

Cut the cod into pieces.
Peel the potatoes and cut them in half.
Preheat the oven to 180ºC (350ºF).
In the bottom of a glass baking dish, place the sliced onions and 100 ml (1/2 cup) olive oil.
On top of the onion and the olive oil, place the cod pieces, potatoes and the unpeeled crushed garlic.
Season with salt, pepper, paprika, lemon juice and the remaining olive oil.
Bake for about 1 hour and 10 minutes. Occasionally, baste the cod and the potatoes with the sauce.
Turn off the oven, sprinkle with chopped parsley and serve.
