Heat oil in a kadhai (wok) until hot.

Fry chopped onions until golden brown; remove excess oil later.

Add 5 cloves of garlic and 1 inch piece of ginger to the oil.

Once everything is well-fried, transfer to a plate and blend into a fine paste.

Add crushed whole spices (cardamom, clove, cinnamon, black pepper) and mix in red chili powder, cumin powder, coriander powder, and a little turmeric.

Add kasuri methi and sauté the spices; add a little water to prevent burning.

Mix in the previously made onion-tomato paste with the spices; no need to cook it too long since it was already fried.
