250 g peeled raw prawns
1 large finely chopped onion
2 finely chopped tomatoes
2 teaspoons tamarind paste
1 tablespoon sugar
2 finely chopped cloves of garlic
0.5 teaspoon fenugreek seeds
0.5 teaspoon mustard seeds
0.5 teaspoon cumin seeds
0.5 teaspoon coriander seeds
0.5 teaspoon salt
1 teaspoon chili powder
1 teaspoon coriander powder
0.5 teaspoon turmeric powder
0.5 teaspoon cumin powder

150 ml hot water

Heat 2 tablespoons of oil in a pan.

Add in the finely chopped onion and garlic, and gently fry until golden brown (about 10 minutes).

Add in the fenugreek, mustard, cumin, and coriander seeds, and fry for another minute.

Add in the ground spices (chili powder, coriander powder, turmeric powder, cumin powder) and cook for another 30 seconds.

Add in the finely chopped tomatoes and salt, stir, and increase the heat.

Cook the mixture until the tomatoes start to break down and the mixture thickens (about 5-6 minutes).

Dissolve the tamarind paste and sugar in 150 ml of hot water and add it to the pan.

Bring the mixture to a boil and taste to ensure it is hot, sweet, and sour in equal measure.

Leave the mixture to simmer for 10 minutes until it thickens.

Add in the prawns and cook for 1-2 minutes until they turn pink.
