1 capsicum

3 tomatoes
2 green chilies

½ tsp cumin seeds
1 pinch asafoetida
1/3 tsp turmeric powder
1 tsp coriander powder
1 tbsp dry fenugreek leaves
1 tsp ginger paste
¼ tsp red chili powder
1 tsp salt
½ cup water

Dice the paneer into 1 inch square chunks.

Chop the capsicum into square chunks and remove the seeds.

Preheat a pan and heat 2 to 3 tsp oil in it.

Place the paneer chunks in the pan and roast until brown on one side.

Flip the paneer chunks and roast until brown on the other side.

Transfer the fried paneer chunks to a plate.

Drop the capsicum chunks in the pan and roast until crunchy, stirring well and covering for a minute.

Transfer the roasted capsicum to a separate plate.

Heat 2 tbsp oil in a wok.

Add ½ tsp cumin seeds and let them splutter.

Add 1 pinch asafoetida and reduce the flame.

Add 1/3 tsp turmeric powder and 1 tsp coriander powder.

Add 1 tbsp dry fenugreek leaves.

Add 1 tsp ginger paste and the prepared tomato-green chili-cashew paste.

Add ¼ tsp red chili powder and sauté the masala until oil starts separating from the edges.

Add 1 tsp salt and less than ¼ tsp garam masala, mixing well.

Add ½ cup water to the masala and mix well.

Drop the roasted paneer and capsicum chunks into the masala and mix everything well.

Add some coriander leaves and cover to cook on medium-low flame for 4 to 5 minutes.

Stir the sabzi and transfer it to another bowl, garnishing with fresh coriander.
