Jain Malai Kofta

Cultural Context

Originating from Indian cuisine, Jain Malai Kofta reflects the dietary restrictions of the Jain community, which avoids root vegetables and certain animal products. This dish celebrates rich flavors through creamy gravies and fried dumplings, making it a festive choice for special occasions. Today, it is enjoyed across India and in many Indian restaurants worldwide, often adapted to suit various dietary preferences.

1

Heat oil in a handi.

2

Add cumin, cinnamon stick, cloves, black cardamom, green cardamom, whole black pepper, and green chili paste; mix well.

3

Add chopped tomatoes, bottle gourd, cashews, and spices (turmeric, salt, coriander powder, cumin powder, garam masala) and mix thoroughly.

4

Add water, cover, and let it cook on low heat.

5

Boil raw bananas and grate them.

6

In a bowl, mix grated bananas with grated paneer, cornflour, salt, red chili powder, coriander powder, cumin powder, and turmeric.

7

Take a small portion of the mixture, create a small cavity, and stuff it with dried fruits (raisins, cashews).

8

Seal the kofta and shape it into a round ball; set aside.

9

Heat oil for deep frying the koftas.

10

Fry the koftas until golden brown; ensure the mixture is well bound due to cornflour and paneer.

11

After frying, blend the gravy mixture into a smooth paste once it cools down.

12

In the same kadhai, add a bit of ghee and oil, then add kasuri methi.

13

Pour in the prepared gravy and adjust the consistency with water; let the oil release.

14

Add a secret ingredient: ketchup and mawa, and mix well.

15

Check the consistency and adjust with more water if needed.

16

Serve by placing gravy on a plate, adding the koftas on top, and garnishing with cream.
