Instructions

  1. 1Heat oil in a pan over medium heat until shimmering.
  2. 2Add mustard seeds and let them pop for a few seconds.
  3. 3Sauté chopped onions until translucent, about 5 minutes.
  4. 4Stir in minced garlic, ginger, and chopped green chili; cook for 2-3 minutes until fragrant.
  5. 5Add diced tomatoes and cook until soft, about 5 minutes.
  6. 6Mix in coriander powder, cumin powder, turmeric, and salt; sauté for 1-2 minutes.
  7. 7Pour in coconut milk and bring to a simmer.
