Peel the onion and slice it thick enough to separate the rings.

Slice firm tomatoes and remove the pulp.

In a mixing bowl, add 1 cup of besan, salt to taste, green chilies, red chilies, chopped onions, a pinch of asafoetida, red chili powder, and grated ginger.

Slowly add water to the batter until it is thicker than usual pakoda batter, mixing to avoid lumps.

Add chopped tomatoes (the pulp) and kasuri methi to the batter and mix well.

In a pan, heat oil over medium temperature.

Arrange onion rings in the pan and carefully add the batter on top.

Cook for 2-3 minutes on one side, then flip to cook the other side.

Sprinkle chaat masala on the finished pakoda before serving.

In a separate pan, heat ghee for the tadka and add cumin seeds, curry patta, hing, whole red chili, and optional cinnamon stick.

Once the tadka is ready, add the curry mixture and stir continuously for the first few minutes to prevent curdling.
