Cottage cheese offers a lower-fat alternative.
Heat a kadai and add 2 tablespoons of mawa.
Add a little ghee and mix well.
Add 5-6 black pepper, 5-6 cloves, and 1 tablespoon of red chili to the mixture.
Mix well and cook for a while.
Add 3 boiled and mashed potatoes to the mixture.
Add 1 cup of sugar and mix well, cooking for a minute.
Add 2 green chilies and 5-6 garlic cloves, and cook until well combined.
Chop 5 tomatoes and add them to the mixture, covering and cooking for 5-7 minutes.
Check the mixture and add cashew pieces, mixing well.
Cover and cook for another 2 minutes until the tomatoes and onions are well cooked.
Let the mixture cool down before blending it into a gravy.
In a separate pan, heat 2 tablespoons of oil and 2 tablespoons of butter.
Add the prepared gravy to the pan and mix well.
Add spices: 1/4 teaspoon turmeric, 3 tablespoons Kashmiri red chili, 2 tablespoons Kitchen King masala, and ginger powder to taste.
Mix well and cover, cooking for 2 minutes.
Set the gravy aside.
Prepare the cheese angoori by mashing the boiled potatoes and adding 1 cup of sugar, 1 tablespoon of green chili, and coriander.
Add 3 tablespoons of cornflour and mix well, forming small balls.
Coat the balls in cornflour to prevent melting during frying.
Heat oil in a kadai over medium heat and fry the balls, being careful not to stir too early to avoid breaking them.
Once golden brown, remove the balls from the oil.
Add the fried balls to the gravy and mix well, adding a little butter on top.
Add 1 cup of cream to the gravy for thickness and creaminess.
Garnish with cashew pieces and additional cheese before serving.
