Ingredients

  • 500 grams paneer (cottage cheese)
  • 1 cup thick yogurt
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons lemon juice

  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 bell pepper, cut into cubes
  • 1 onion, cut into cubes
  • 1 tablespoon chopped fresh coriander (for garnish)

Instructions

  1. 1In a large bowl, combine the thick yogurt, ginger-garlic paste, lemon juice, vegetable oil, cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, and salt to create a marinade.
  2. 2Cut the paneer into cubes and add it to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. 3Preheat your grill or oven to 200°C (400°F).
  4. 4Thread the marinated paneer, bell pepper, and onion onto skewers, alternating between the ingredients.
  5. 5Place the skewers on the grill or in the oven and cook for about 15-20 minutes, turning occasionally, until the paneer is golden and slightly charred.
  6. 6Remove the skewers from the grill and let them rest for a few minutes.
  7. 7Garnish with chopped fresh coriander before serving.
  8. 8Serve hot with mint chutney and lemon wedges.
