Start by preparing the paneer for satay.
Cut the paneer into pieces suitable for satay.
In a bowl, add 2 tablespoons of corn flour.
Add 1 tablespoon of all-purpose flour to the bowl.
Season with salt to taste.
Add a little white pepper to the mixture.
Incorporate some szechuan sauce and chili sauce into the mixture.
Mix all the dry ingredients and sauces together.
Gradually add water to create a batter.
Dip the paneer pieces into the batter to coat them.
Heat oil in a pan for frying the paneer.
Carefully drop the coated paneer pieces into the hot oil one by one.
Fry the paneer until it is golden brown on one side, then flip to fry the other side.
Once golden brown, remove the paneer from the oil and set aside.
To make the sauce, add a little butter to a pan.
Add chopped garlic, chopped chili, and chopped onion to the pan.
Sauté until the onions are golden brown.
Add some water to the sautéed mixture.
Once the water is boiling, add 1 tablespoon of szechuan sauce.
Season with a little salt and white pepper.
Add chili sauce to taste.
Add a small amount of light soy sauce to the mixture.
Mix well and then add 2 tablespoons of peanut butter.
Stir until the peanut butter is well combined and the sauce is ready.
Add chopped coriander leaves and spring onion to the sauce.
For plating, arrange the fried paneer on a plate.
Pour the prepared peanut butter sauce over the fried paneer.
Garnish with additional spring onion.
