Assam Laksa

200g rice noodles
300g mackerel fillets
1 tbsp tamarind paste
1 tbsp sugar
1/2 tsp salt
1/2 tsp turmeric powder
1/2 cup coconut milk
1/2 cup water
1 cucumber, julienned
1/2 onion, sliced
2 sprigs mint leaves
2 sprigs coriander leaves
1 red chili, sliced

Cook the rice noodles according to package instructions, then drain and set aside.

In a pot, add the mackerel fillets, turmeric powder, salt, and enough water to cover the fish. Boil until the fish is cooked through, about 10 minutes.

Remove the fish from the pot, let it cool, then flake the fish into pieces, discarding the skin and bones.

In the same pot, add the tamarind paste, sugar, coconut milk, and additional water. Stir well and bring to a simmer.

Add the flaked mackerel back into the pot and let it simmer for another 5 minutes to combine the flavors.

To serve, place a portion of rice noodles in a bowl, ladle the mackerel soup over the noodles.

Top with julienned cucumber, sliced onion, mint leaves, coriander leaves, and sliced red chili.
