Marinate the chicken with blended shallots, ginger, and 1 1/4 tsp salt for 30 mins.

Steam the chicken for 15 mins.

Prepare the sauce by combining 30ml of coconut milk, 100 ml of water, blended shallots, chilli paste, lemongrass, tamarind, 1/2 tsp salt, and 2/3 tsp brown sugar in a pot. Let it simmer on medium heat until half boiled, stirring continuously.

Take the chicken out of the steamer and coat it evenly with the sauce.

Grill or air fry the chicken for 5-8 mins.

Add the remaining 200ml of coconut milk to the sauce and simmer until thick.

After grilling or air frying the chicken, coat it again with the medium-thick sauce and grill or air fry for another 3-5 mins.
