1 inch ginger
1 inch turmeric
2 inch galangal
5 cloves garlic
2 inch belacan (optional)
10 dried chilli (soaked in warm water, seedless)
5 red chilli
5 chilli padi (depends on spicy level)
2 tomatoes
2 large onion (or 3 medium size)
1 lemon grass (bottom part to grind & upper part for gravy)
1 onion (sliced)
2 slices galangal
1 tomato (cut into 6)
10/12 okra/lady fingers
handful daun kesum
ping pong ball size of tamarind juice
salt to taste
gula melaka (or white sugar to taste)

Grind ginger, turmeric, galangal, garlic, belacan (if using), dried chilli, red chilli, chilli padi, tomatoes, large onion, and lemon grass (bottom part) to make a paste.

In a pot, heat oil and sauté the sliced onion and galangal slices until fragrant.

Add the ground paste to the pot and stir well.

Add the cut tomato and okra/lady fingers to the pot.

Pour in the tamarind juice and add salt and gula melaka (or white sugar) to taste.

Simmer until the okra is cooked and the gravy thickens.
