2 tablespoons dry red chillies, crushed
2 bird eye chillies, chopped
3 candle nuts, blended
1 stalk lemongrass, minced
1 inch galangal, grated
3 cloves garlic, minced
1 tablespoon belacan (dried shrimp paste)
2 tablespoons tamarind concentrate
1 teaspoon salt
1 tablespoon sugar
4 kaffir lime leaves, torn
1/4 cup shallot soaking water
