Cut tofu into small pieces.

Mix tofu with ground beef in a bowl.

Season the mixture with 2 and 1/4 teaspoons kosher salt, 3/4 teaspoon ground black pepper, and 3/4 teaspoon granulated garlic.

Heat 2 tablespoons of oil in a wok over medium to high heat.

Add the ground beef and tofu mixture to the heated oil and brown it until most of the liquid evaporates.

Add 2 pounds of steamed cut-up cabbage, 2 pounds of bean sprouts (drained of water), and a can of bamboo shoots to the wok.

Season the vegetable mixture with 3/4 teaspoon sea salt, 1 and 3/4 teaspoons seasoned salt, 1/2 teaspoon ground black pepper, and 1/2 teaspoon granulated garlic.

Stir the mixture together and turn off the stove to cool it down.

Transfer the filling to a colander to drain excess liquid and let it cool.

Prepare to roll the lumpias by laying a spring roll wrapper diagonally on a board.

Wet two sides of the wrapper with an egg wash.
