Preheat the Instant Vortex air fryer.

Mix dry ingredients: 250 grams jumbo organic oats, 40 grams cashews, 10 grams flaked almonds, 40 grams pumpkin seeds, 10 grams sunflower seeds, and 10 grams desiccated coconut in a bowl.

Add a pinch of salt to the dry mixture and mix using your hand.

In a separate bowl, mix wet ingredients: 50 grams melted coconut oil and 50 mL maple syrup.

Pour the wet ingredients into the middle of the dry ingredients and mix well to coat everything.

Add the granola mixture into the preheated air fryer basket.

Set the air fryer to bake mode at 160 degrees Celsius for 20 minutes.

After baking, let the granola cool; it may still have some moisture, which will evaporate as it cools.
