Mix all dry ingredients: cake and pastry flour, baking powder, baking soda, salt, and speculaas spice together using a whisk.

Cream together the softened unsalted butter and soft brown sugar until well mixed.

Pour the flour mixture into the butter mixture and quickly form it into a dough using your hands.

Flatten the dough into a disc, wrap it in plastic wrap, and chill in the fridge for about 1 hour (or longer for more flavor development).
