gelatin

Agar-agar is plant-based and works well as a gelling agent.
Combine sugar and glucose syrup in a saucepan over low heat.
Stir until sugar dissolves completely, about 5 minutes.
Add liquorice extract and anise oil, mixing well.
In a separate bowl, dissolve gelatin in warm water until fully blended.
Add the gelatin mixture to the sugar mixture, stirring continuously.
Incorporate starch and salt, mixing until smooth and thickened.
Pour the mixture into a mold, spreading evenly.
Allow to cool at room temperature for several hours until set.
Cut into desired shapes or pieces once set.
Store in an airtight container.
