In Dutch culture, they are often made during family gatherings and celebrations, showcasing the versatility of simple ingredients. Today, pannenkoeken have gained popularity beyond the Netherlands, with variations appearing in many countries, appealing to both sweet and savory palates.

Dice the Granny Smith apples into 1-inch cubes, leaving the skin on.
Heat a pan over medium heat, add a knob of butter and a dash of olive oil, then add the diced apples and season with sea salt.
Toss the apples and cook until soft.
In a mixing bowl, combine 100 g of plain white flour, 300 mL of full fat milk, and a small pinch of sea salt.
Add 4-5 tablespoons of double cream to the mixture and whisk for a couple of minutes until smooth.
Crack in 2 free range eggs and whisk into the batter.
Pass the batter through a fine sieve for a silky texture, then whisk for another minute until it reaches the consistency of single cream.
Scatter a generous amount of sugar over the softened apples and stir to caramelize.
Pour in a generous glug of Brandy and stir until the alcohol cooks off and a thick syrup forms.
Cook streaky bacon in a large flat-bottomed frying pan until crispy, then remove and clean the pan.
Melt a generous knob of butter in the pan, then ladle in the pancake batter, swirling to cover the bottom.
Cook the pancake for about 1-1.5 minutes until the edges start to come loose and are brown.
Flip the pancake using a plate, then add cream cheese and the cooked bacon on top.
Cook for another minute on the other side until done.
Slide the pancake onto a large plate, scatter over the caramelized apples, drizzle with Canadian maple syrup, and dust with powdered or caster sugar.
