Separate 10 egg yolks from the whites, using the shell-to-shell method.
Place the egg whites aside for later use, such as in baking or cocktails.
Add 1 and 1/3 cups of sugar to the egg yolks.
Add 1/2 teaspoon of salt and 1/8 teaspoon of cinnamon to the mixture.
Whisk the egg yolks and sugar together until pale yellow and the sugar starts to dissolve.
Pour in the brandy while whisking continuously until well combined.
Transfer the mixture to a bottle or jar and seal tightly.
Refrigerate for at least 24 hours to allow flavors to meld.
Serve chilled in small glasses.
