Break 5 eggs and separate the yolks from the whites.

Add sugar, vanilla sugar or vanilla essence, and a pinch of salt to the yolks and whisk to combine.

Whisk until the mixture increases in volume and lightens in color.

Optionally, add 1/4 teaspoon of turmeric for color or a little saffron for aroma.

Put the bowl on a water bath over boiling water and stir continuously with a silicone spatula for 5 to 10 minutes until the mixture thickens.

Check if the mixture is ready by running a finger along the spatula; if the line remains, it's done.

Pour the mixture into a sterilized bottle through a mesh strainer to filter out any egg clots.

Let the mixture cool slightly before adding 150 ml (5 oz) of brandy or cognac.

Close the lid and shake thoroughly to mix everything.

Put the bottle in the fridge overnight to cool completely and let the flavors stabilize.
