olive oil

🥗Healthier: coconut oil

💰Cheaper: vegetable oil

Coconut oil enhances flavor and is solid at room temp.

1

Preheat the oven to 350°F.

2

In a small saucepan, heat 1/2 cup coconut oil and 1/2 cup maple syrup (or honey) together until melted.

3

In a large bowl, combine 4 cups old-fashioned oats, 1/2 teaspoon Celtic salt, and 1 tablespoon cinnamon.

4

Mix the dry ingredients together until well combined.

5

Chop the pecans into smaller pieces and add them to the bowl with the oats.

6

Add 1/2 cup sliced almonds to the mixture.

7

Pour the melted coconut oil and maple syrup mixture into the bowl and mix thoroughly until everything is coated.

8

Do not add dried fruits yet; they will swell in the oven.

9

Add 1 tablespoon of vanilla bean paste to the mixture and stir.

10

Spread the granola mixture onto a baking sheet lined with parchment paper, ensuring it's not too thick but also not in a single layer.

11

Pat down the mixture slightly to help it stick together.

12

Bake in the preheated oven for about 25-30 minutes, stirring halfway through is not recommended to keep it clumpy.

13

Once baked, let it cool completely before adding 1 cup of raisins and breaking it into chunks.

14

Store the granola in a half-gallon mason jar with a lid.
