Preheat the oven to 300°F (148°C).

In a large mixing bowl, combine 2 cups of old-fashioned rolled oats.

Add 1/2 cup of roughly chopped almonds and 1/2 cup of hazelnuts to the bowl.

Add 1/2 cup of unsweetened coconut flakes to the mixture.

In a separate bowl, mix together 2 egg whites, 1 cup of melted coconut oil, 1/2 cup of homemade applesauce, a pinch of salt, 1 teaspoon of cinnamon, and 1/2 teaspoon of nutmeg.

Pour the wet ingredients into the dry ingredients and mix well, preferably with your hands.

Lay the granola mixture onto a flat baking sheet lined with parchment paper, pressing it down with spatulas to make it nice and thin while keeping the ingredients close together.

Bake for a total of 15 minutes, checking at the 20-minute mark to give it a good mix and gently press it back down.

Put the pan back in the oven and finish baking for another 30 minutes or so.

Remove the granola from the oven and let it cool for 20 to 30 minutes before breaking it up into clusters.

Add 1/2 cup of dried cherries to the cooled granola.

Store the granola in an airtight container for up to two weeks.
