Heat oil in a pan until hot
Add paneer cubes and fry for 1-2 minutes until slightly golden brown
Remove paneer and set aside
In the same pan, add more oil if needed
Add coriander seeds, cinnamon, and cloves; sauté briefly
Add cashews and sauté until they turn slightly brown
Add dry Kashmiri red chilies and a green chili; sauté everything well
Add ginger and garlic; stir well
Add chopped onions and cook until slightly golden brown, stirring often
Add chopped tomatoes and salt; stir well and cook on high flame for 2-3 minutes
Lower the flame, cover, and cook for 5-6 minutes until tomatoes are mushy
Remove the lid and check that tomatoes are cooked and tender
Let the mixture cool, then transfer to a blender and blend until smooth
In the same pan, add more oil and cumin seeds; wait for them to sizzle
Add a bay leaf and all dry spices (red chili powder, coriander powder, turmeric powder, cumin powder); sauté briefly
Add the blended gravy to the pan and sauté for 3-4 minutes, adding water to adjust consistency if needed
Add yogurt and crushed roasted fenugreek leaves; stir well
Add paneer cubes and green peas; stir until well coated with gravy
Check for salt and add more water if needed; cook for 1-2 more minutes
Add garam masala and toss well
Optionally add fresh cream for extra richness; mix well
Garnish with fresh coriander and give a final toss
Serve hot with naan, roti, or rice
