Protein Pancakes

1 cup egg whites
1 full egg
1 tablespoon coconut oil
1 banana
1 teaspoon vanilla extract
cinnamon powder
1/4 to 1/2 teaspoon baking powder
protein powder (chocolate or vanilla)
oatmeal
chocolate chips (optional)
shredded unsweetened coconut (optional)
apple (optional)
blueberries (optional)

Combine 1 cup egg whites, 1 full egg, and 1 tablespoon coconut oil in a bowl.

Add 1 banana, 1 teaspoon vanilla extract, and cinnamon powder to the mixture.

Incorporate 1/4 to 1/2 teaspoon baking powder and your choice of protein powder (chocolate or vanilla).

Blend the mixture until smooth.

Add oatmeal to the blended mixture and let it sit for 2 to 5 minutes to thicken.

While the mixture thickens, turn on a skillet to medium-high heat.

Add coconut oil to the skillet.

Using a tablespoon, pour the pancake batter onto the skillet, smoothing it out slightly.

Add chocolate chips to one pancake, shredded coconut to another, and apple and blueberries to others as desired.

Cook for about 2 to 3 minutes, then flip the pancakes over and let them cook until done.

Once cooked, place the pancakes on a plate and serve with maple syrup if desired.
