Protein Pancakes

1 cup rolled oats
1 egg
1/2 cup almond milk
pinch of baking soda
1 banana
1 scoop chocolate protein powder
olive oil (for cooking)
raspberries (for topping)
blackberries (for topping)
almond butter (for topping)

Prepare a blender (Ninja or similar) for mixing the batter.

Add 1 cup of rolled oats to the blender.

Crack 1 whole egg into the blender.

Pour in 1/2 cup of almond milk.

Add a pinch of baking soda to the mixture.

Break 1 banana into pieces and add to the blender.

Add 1 scoop of chocolate protein powder to the blender.

Blend all ingredients until smooth, adjusting the consistency as needed.

Heat a pan on medium-high heat and add a dab of olive oil.

Once the pan is heated, lower to medium heat and pour a spoonful of batter onto the pan.

Cook until pancakes are golden brown, adjusting heat as necessary.

While pancakes cook, wash raspberries and blackberries for topping.

Once pancakes are done, stack them on a plate.

Top pancakes with almond butter, raspberries, and blackberries as desired.
