Prepare the filling by heating vegetable oil in a pan over medium heat.
Add chopped onions and garlic, sauté until fragrant, about 2-3 minutes.
Stir in ground pork and cook until browned, about 5-7 minutes.
Add shredded cabbage, carrots, and bean sprouts; cook until softened, about 3-4 minutes.
Season with soy sauce, ginger, black pepper, and salt; mix well and remove from heat.
Allow the filling to cool slightly before assembling the rolls.
Lay a spring roll wrapper on a clean surface, with a corner facing you.
Place a spoonful of filling near the corner of the wrapper.
Fold the corner over the filling, then roll tightly, folding in the sides as you go.
Seal the edge with a beaten egg to secure the roll.
Repeat with remaining wrappers and filling.
Heat oil in a deep fryer or large pot to 350°F (175°C).
Fry the loempias in batches until golden brown, about 4-5 minutes per side.
Remove and drain on paper towels before serving.
