Preheat the oven to 220°C (428°F).
Cut the Moranka potatoes into shoestring fries.
Place the potatoes on a tray and drizzle with olive oil, then season with salt and black pepper.
Roast the potatoes in the oven for about 30 minutes without stirring.
While the potatoes are roasting, season the sirloin steak with salt, black pepper, and paprika.
Heat a skillet over high heat and add butter and olive oil until melted.
Sear the steak in the skillet until it reaches the desired doneness, using the finger test to check for rare, medium-rare, or medium.
Once cooked, let the steak rest for a few minutes before slicing.
Plate the steak alongside the roasted potatoes, adding a touch of fresh salt and pepper to the steak.
