Season the New York steak with salt and pepper on all sides.
Peel the Idaho potatoes and cut them into matchsticks.
Boil water in a pot and prepare a bowl with cold water.
Blanch the cut potatoes in boiling water with a slight amount of salt until just barely softened.
Transfer the blanched potatoes into cold water to stop the cooking process.
Place the blanched potatoes onto a lined sheet pan and freeze them to prepare for frying.
Heat canola oil in a cast iron skillet until it reaches 350°F to 360°F for frying the potatoes.
Sear the seasoned steaks in the hot cast iron skillet, cooking for about 4 minutes on each side until a beautiful color develops.
Add butter, garlic, thyme, and rosemary to the skillet and baste the steaks as they cook.
Remove the steaks from the skillet and let them rest for about 20 minutes.
Fry the frozen potatoes in batches until golden brown and crispy, shaking off excess oil after frying.
Slice the rested steak into bite-sized pieces and serve with the fries and any desired sauce.
