Protein Pancakes

1 cup low-fat skyr
3 egg whites
1 tablespoon maple syrup
1 teaspoon vanilla extract
oats (blended into a fine powder)
2 tablespoons spelt flour or whole wheat flour
3 tablespoons flaxseed meal
1 tablespoon tapioca starch or cornstarch
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
coconut oil (for greasing the pan)

Blend oats into a fine powder or use store-bought oat flour.

In a bowl, combine 1 cup low-fat skyr, 3 egg whites, 1 tablespoon maple syrup, and 1 teaspoon vanilla extract.

Add blended oats, 2 tablespoons spelt flour or whole wheat flour, 3 tablespoons flaxseed meal, 1 tablespoon tapioca starch or cornstarch, 2 teaspoons baking powder, 1/4 teaspoon salt, and 1/2 teaspoon cinnamon to the mixture.

Stir until everything is combined but do not over mix the batter.

Let the pancake batter sit for 10 minutes to allow the oats to soak up the liquid.

Scoop the pancake batter onto a hot pan greased with a little coconut oil using a cookie scoop (about 1/4 cup in size).

Cook pancakes over medium heat for about 2 to 4 minutes until deep golden brown on the bottom.

Flip the pancakes and cook for about 2 more minutes on the other side.

This recipe should make about 8 pancakes.
