Protein Pancakes

1 scoop protein powder
1 peeled banana
1 teaspoon baking powder
1 egg
80ml milk
dash of vanilla essence (optional)
oil for frying
summer fruits for topping

Add 1 scoop of protein powder to a blender.

Add 1 peeled banana and 1 teaspoon of baking powder to the blender.

Crack 1 egg into the blender.

Pour in 80ml of milk.

If using unflavoured protein powder, add a dash of vanilla essence.

Place the lid on the blender and blitz until smooth.

Heat a drizzle of oil in a non-stick frying pan over low heat.

Pour the batter into the frying pan for each pancake.

Cook for about 1 minute until bubbles form on the surface.

Carefully turn the pancake over and cook for another minute.

Remove the pancake from the pan and repeat the process with the remaining batter.

Top the stack of pancakes with summer fruits.
