Add 150 grams of plain flour into a bowl.

Add 1 tablespoon of gram flour and 0.5 teaspoon of yeast to the bowl and mix quickly.

Add 160 ml of water and whisk until combined.

Cover the mixture and leave it overnight to ferment.

The next morning, check the batter; it should have air bubbles and a sour smell.

Whisk the batter again to incorporate air.

Fill a piping bag with the batter.

In a pan, combine granulated sugar and water to make sugar syrup (chashni).

Add a pinch of saffron and ground cardamom to the sugar syrup and let it cook until the sugar melts.

In another pan, heat sunflower oil (or ghee) to around 160°C for frying.

Pipe the batter into the hot oil in circular shapes and fry until golden.

Once golden, remove the jalebis and immediately soak them in the warm sugar syrup for a few minutes.

Serve the jalebis hot and crispy.
